he primary role of this position is to safely operate the draining matting conveyor (DMC), monitor drying of the cheese, monitors milling of curds, and the cheese pumping on and off of the conveyors. This position is responsible for quality of the cheese and must perform quality inspections throughout the process of the cheese making process.

Desired Qualifications:

Food manufacturing, material handling experience is preferred. Prior experience in the dairy or cheese industry is preferred. Prior experience in manufacturing is a plus. Knowledge of HACCP, GMP's, OSHA and loss control programs is highly desirable. Prior cheese salting experience preferred.

Duties:

Responsible for safely operating the draining matting conveyor (DMC). Operator will start up, shut down, Clean in Place (CIP), and troubleshoot equipment when appropriate. Responsible for monitoring cheese PH and salt levels keeping them within specifications. Monitor cheese while it’s being pumped into DMC and being pumped off. Perform quality checks in DMC by sampling the cheese and whey from DMC. Operate HMI screen to run DMC, salt belt. Maintain all related records and documentation per policy and in accordance with state Department of Agriculture & Land Stewardship. Document and communicate production deficiencies to leads and management. Report and communicate critical information during shift change overs. Follow equipment start up and shut down procedures. Monitor the composition of solids and temperature, making adjustments depending on the type of product being produced. Responsible for maintaining internal customer specifications. Responsible for testing equipment using results to adjust equipment to improve quality of product. Perform and document preventative maintenance and master sanitation tasks. Continuously look for process improvement opportunities and effectively communicate to others. Maintain good housekeeping and cleanup of equipment and supplies in your work areas throughout the plant. Must follow Standard Operating Procedures without deviation. If properly licensed, operate forklift. Assist in cheese packaging area and with training new employees. Provides assistance to the maintenance personnel, when needed, for machine repairs or troubleshooting. Adhere to all Quality and Food Safety policies and procedures, reporting any nonconformity. Education: High School Diploma or General Education Degree (GED) is preferred.

Shift: 5 am - 5 pm or 5 pm - 5 am
